I always feel that if you use a gas BBQ you might as well just cook it in the kitchen and carry it into the garden to eat.
Without the 'stuff burning' trying to set your dinner on fire too the whole BBQ experience is lost.
This is about entertainment not nutrition.

My current favs are slow cooked short ribs or Greek style chicken thighs on the rotisserie.

    Both on charcoals/briquettes

I currently have a gas but I much prefer charcoal. Gas is convenient, often in the summer I cook every day on it and sometimes just for me so to be able to easily light it and cook bows well. Mines pretty much on its last legs so may use the gas up then go charcoal

Charcoal. Build your fire on the cooking grate, then drop into base once it has sterilised the grill.
