the fan should bring the temp down to well under 100°, possibly under 90°, something else is up mate, try manually switching on the fan at 90°...

A dyno is an expensive bit of equipment and a tune isn't done with 2 runs and 30mins... If they do it right they'll be looking at 5-10 runs and...
Mines a racebike, so plenty of different temps on my bikes ;)
get yourself a proper dyno tune, although I have never noticed it before on any of my bikes.
