If you have cloud back up, for all your emails, notes etc...it will back up from the cloud, but you need to click "back up" in the settings. As Ken said, if you last backed up yolks ago (mine was Jan this year) then it restores all the stuff on that date. If you haven't backed up, then...oops a daisy.
I bet they'll have an update within a month, it's effecting brand new iPad airs too.... Weird though, as i have 2 iPad 2's... one on the kitchen wall which has ios8 on and runs perfectly, the other iPad 2 was jerky, buggy and wouldn't do pics etc.... I haven't updated Emmas as she would go batshit, so i've left hers alone. I did mine last night back to ios7.1.2 and alls well in the world.

Have update to ios8 but not to worried as she uses the Ipad more than me now since I got a Samsung galaxy tab s 10.5
There does appear to be a bit of Russian Roulette involved as my 5s is playing silly buggers too. Nowhere near as bad as the pad though. Shit happens, they'll do something about it. Not too quickly, as that would be admitting they got it wrong to start with, but the iPad 2 is running on an older processor than the new OS was written for, so I suspect the bugs will be ongoing.
