They say a deer can hear a hammer contact the primer on a cartridge as it is fired and react before the projectile strikes. With a muzzle velocity of 2,500 fps, that is one fast mover. Some people find it stupid to ride a bike at all. 120 mph hitting a tractor full leathers etc, 40 mph sliding down the road in your t shirt. The only thing the paramedics like about leathers is they keep the body together for the undertakers, It is all based on your own perspective.
As a bit of an engineer ( and shooter ) the dear will not hear the hammer hit the primer as the bullet is travelling at 2500 fps the speed of sound is 1125 fps so the bullet is going to reach the target before the sound, this is why they are called supersonic rounds
